Every kitchen and chef needs a non-stick frying pan. This is a good one to start with. It is kind of big for cooking a couple eggs, but with practice you will be making beautiful over easy eggs and omelets. Also, its size allows you to accommodate cooking larger dishes of potatoes, chicken, or whatever you want to fry, with minimal use of an oil product. My pan stays on the stove and rarely gets put away. Be warned, this is not a cast iron skillet. Do not use any steel spatulas or spoons with this pan. Always stir and remove food with a wooden spoon or rubber spatula. Better yet, learn to flip the food and don't use a utensil at all.The trick to learning how to flip food in a non-stick pan is to practice with a piece of dry toast. Place a piece of toast in the pan and flick your wrist just enough to push the toast against the pan edge furthest way from you. As the toast lifts off the pan push your hand slightly forward to make sure the toast lands in the pan. Don't try to bounce or toss the toast in the air. Getting airborne is not the idea. You want a smooth rolling motion of the food item. With a little practice you can roll the toast off the pan edge over and over. From there, move to a fried egg or diced potatoes. Do not attempt to flip food with cooking oil or drippings, you will be guaranteed burns on your arm, or a possible kitchen fire. This pan was designed to be used dry, but I generally use a tsp of butter when frying eggs, and a little olive oil when frying potatoes.
